I used to do it myself, but three years longstanding/not missing a day and not being able to get a raise... I just couldn't deal with that shiz.

I see. Well, I used to have a job as a waiter full time as well in another restaurant 9 months ago for 2 and a half years. It was great at first, but over the years the restaurant started to decline in quality, organisation, and staff, which turned it into a complete hell hole. So I do have the experience, I'm just a bit rusty after 9 months absence from waitering.
